Description

Homemade baking for tea. This vegetarian charlotte does not contain eggs, yet it turns out just as fluffy, soft, and incredibly tender. What's the secret? Using semolina! Try it—this cake is truly delicious! It's slightly similar to a semolina cake, but the semolina flavor isn't as pronounced. Apples are, of course, a must-have ingredient in traditional charlotte, but in this vegetarian version you can deviate from tradition and use pears, apricots, plums, or even berries. Experiment and enjoy your time in the kitchen, as well as tea time with friends and family. Serve warm or chilled. Perfect with tea.

    Prepare all the necessary ingredients. I recommend using richer kefir, as it will make the pie tastier.

    Mix all the dry ingredients: sugar, flour, semolina, vanilla sugar, and baking soda. Stir well.

    Add kefir, mix until smooth.

    Pour in the sunflower oil and mix thoroughly with a spoon. At first, the oil will clearly separate from the dough, but after just a minute, it will turn into a smooth, uniform consistency, and the dough will become soft and tender. This is exactly the kind of dough that will yield the perfect vegetarian charlotte.

    Cut the apples into cubes without peeling them and place them on the bottom of the baking dish. I use a silicone mold, but even if you have a regular metal pan, there's no need to grease it—the batter won't stick at all because it contains sunflower oil.
