
Vegetarian pasta
Description
The recipe won't take much time. Traditionally, pasta is prepared with a meat sauce. However, there are people who, based on their principles, don't eat meat and replace it with various vegetables. Without meat, the dish doesn't become any worse—in fact, it gains a unique flavor. I'd like to offer you my recipe. Serve hot.

Prepare all the necessary ingredients. Peel the carrots and onion. Rinse all the vegetables thoroughly under running water.

Cut the onion into small cubes.

Grate the carrot on a fine grater.

Cut the zucchini into cubes.

In a pan with heated sunflower oil, add the onion and sauté for a couple of minutes. Then add the carrots and fry for a few more minutes. Next, add the cubed zucchini and simmer until half-cooked. Add the diced tomatoes. Mix everything well and cover with a lid. Simmer over low heat for 5-10 minutes.

When the vegetables are ready, add finely chopped cilantro.

Stir well and heat for another minute. The pasta sauce is ready!

Add the pasta to boiling water, cook it almost until done, then rinse with water (if you cook the pasta completely, the hot sauce may cause them to lose their appealing appearance and taste). Check the pasta's readiness by simply taking one piece out and tasting it. Transfer the pasta to a bowl, pour in a couple of tablespoons of sunflower oil, and mix well to prevent sticking.

Place the pasta on a plate, top with the sauce, and garnish the dish with fresh herbs. Vegetarian pasta is ready.
