
Vegan mayonnaise
Description
Homemade sauce recipe. This recipe is specially designed for those who avoid animal fats in their diet but still enjoy mayonnaise for dressing salads or using it in other dishes. Moreover, this sauce is an excellent alternative to store-bought mayonnaise. You can use mild or spicy mustard, and also add horseradish. This mayonnaise can be stored for a long time in the refrigerator. It's perfect served with pasta, meat, and vegetables.

1. Place tofu into a bowl, peel the garlic and cut it into small pieces, add mustard (mild or spicy), pour in vinegar and sunflower oil (you can use any other oil, such as olive, sesame, or nut oil), season with salt to taste, but no more than half a teaspoon of salt. If you prefer a more interesting flavor, you can add chopped herbs or other seasonings to taste.

2. Using an immersion blender, mix all ingredients until smooth, making sure there are no large pieces of garlic. If the finished mayonnaise seems too thick, simply thin it with cold boiled water.
