
Vegan Apple Muffins
Description
You can use any plant-based milk in this recipe: soy, almond, or oat milk. If you don't follow a vegan diet, feel free to use regular milk. Serve warm or chilled. Perfect with tea.

1. Peel the apples, cut them into small cubes, and place them in a saucepan or deep skillet. Add a cinnamon stick, lemon juice, and 2 tablespoons of brown sugar. Simmer the apples over low heat until soft. Remove about 150 g of the cooked apples and puree them with an immersion blender.

2. For the dough: sift flour into a large bowl, add the remaining sugar, baking soda, vanilla, salt, and mix well with a whisk. In another bowl, pour in the milk, sunflower oil, apple puree, apple cider vinegar, and mix everything together. Add the liquid ingredients to the flour mixture and stir well.

3. Fill the cupcake molds halfway with batter, then place 1 tbsp of stewed apples with cinnamon on top.

4. Cover the apples with dough and sprinkle with oat flakes.

5. Bake the cupcakes in a preheated oven at 180 degrees for about 20 minutes, checking doneness with a toothpick.

6. Let the baked muffins cool slightly in the pan, then transfer them to a serving plate and serve.
