Prepare all ingredients. Preheat the oven to 180 degrees.

In a deep bowl, mix plant-based milk and rice vinegar. Let stand for 5–10 minutes.

In a separate bowl, mix flour, sugar, baking powder, starch, vanilla, and a pinch of salt.

Add the apple purée and vegetable oil to the bowl with the plant milk and rice vinegar and blend until smooth.

Add all wet ingredients to the dry ingredients and mix until smooth and combined.

Add raspberries to the dough and stir to combine.

Fill the cupcake moulds with batter, a little more than halfway full. Bake for about 25–30 minutes; test doneness with a toothpick.
