
Vegan Red Caviar
Description
You can use any seaweed: kelp, nori, or wakame. The main thing is that they give a “fishy” flavor. Instead of red food coloring, you can use beet juice. If you want smaller roe, dispense them with a syringe and needle. The appetizer is ready. Serve immediately.

Prepare all the ingredients. Put the vegetable oil in the freezer ahead of time for 4–5 hours.

Pour hot water over the seaweed for 5 minutes. Then strain the resulting liquid.

Peel the carrots and grate them, then squeeze out the juice.

Add the carrot juice and red coloring to the seaweed water until the desired color is reached.

Pour the resulting liquid into a saucepan. Add agar-agar and salt. Place the liquid over medium heat, bring to a boil, and simmer for 1 minute.

Draw the liquid into a syringe and start dripping it into cold oil. Try to keep space between the pearls. Then drain the resulting caviar onto a sieve.
