
Vegan sausage
Description
The recipe won't take much time. Since veganism is a stricter diet than vegetarianism, no animal-derived ingredients are used in this recipe—only plant-based ones. A specific flavor to the vegan sausage is given by a blend of spices, which you can adjust to your taste. You can make patties from this "mince," or use it as a base for more complex dishes. Serve hot.

Prepare a spice mixture from the first 9 ingredients in advance and set aside for now.

Heat olive oil in a skillet and sauté finely chopped onion, mushrooms, and minced garlic until soft. Set aside and let cool.

Place the beans in a large bowl (if canned, drain the liquid) and mash using a fork, potato masher, by hand, or in a blender. The result should be a chunky mixture, not a puree.

Then add the sun-dried tomato paste, nutritional yeast, spice mix, and brown rice flour. Mix well.

Add xanthan gum (thickener, food additive) and mix again.

Now add the cooled sautéed vegetables, Worcestershire sauce, and liquid smoke to the bowl, and mix everything thoroughly.

Divide the mixture into 4 parts. Shape each part into a sausage, then wrap it in food foil like a candy.

Cook the vegan sausage in a steamer for 15 minutes, let it cool, then refrigerate for several hours or overnight.
