
Eggplant fan
Description
The recipe won't take much time. Baking in the oven makes the dish juicy and aromatic. All the vegetables absorb each other's flavors and aromas. The dish is beautiful, bright, and colorful, so it can be confidently presented at the table. It's very easy to prepare, and the ingredients are affordable and interchangeable. Serve hot.

1. Wash the eggplants thoroughly and slice them into 1.5-centimeter-thick rounds, cutting almost all the way through but not completely, creating a fan shape. Sprinkle with salt and let sit for 20–30 minutes. Wash the tomato and slice it into rounds.

2. Slice the cheese and smoked meat into pieces of the same thickness as the eggplants. Mix mayonnaise or sour cream with pressed garlic.

3. Rinse the eggplants under running water to remove bitterness, then dry them. Line a baking sheet with foil and arrange the eggplants on it in a fan shape. Into each eggplant slice, alternately place a tomato, then cheese with meat, filling the entire fan this way, and brush with sauce.

4. Wrap the eggplants in foil and place them in the oven. Bake at 180 degrees until the eggplants are tender. Check for doneness with a toothpick. Transfer the cooked fan to a plate and garnish with fresh herbs.
