
Hungarian vatrushki
Description
The pastry is simple and quick to prepare. The dough is made from cottage cheese and margarine, which I first put in the freezer to make it easier to grate. You can substitute the margarine with butter, and either homemade or store-bought cottage cheese will work. The vatrushki can be decorated with chocolate or nuts, or left plain. Serve cooled or slightly warm.

1. Put the margarine in the freezer in advance—it will be much easier to grate. Grate it and place it into a bowl.

2. Crumble the cottage cheese with your hands into the bowl with the margarine.

3. Dissolve the baking soda in boiling water, pour the resulting liquid into the cottage cheese and margarine mixture, add milk, and gradually add flour.

4. Knead the dough, then roll it into a single ball.

5. Divide the dough into several parts, roll each part into a thin sheet, and cut out circles.

6. Sprinkle each circle with sugar, then fold in half, then sprinkle with sugar again and fold in half once more.

7. Press the edges of each vatrushka with a fork so that the melted sugar does not leak out during baking.

8. Break the chocolate bar into small pieces and use to decorate the baked goods.

9. Whisk the chicken yolk and brush it over each vatrushka to get a beautiful crust.

10. Place the vatrushki in a preheated oven at 180 degrees for 25 minutes, possibly less. Serve them 15 minutes after removing from the oven.
