
Vatrushki with cottage cheese according to GOST
Description

Dough recipe No. 1089, cottage cheese filling No. 1135, and the technology itself under No. 1098. Everything is quite simple, although it takes longer than with the usual dough, but it is worth it. If desired, add vanillin to the cottage cheese mixture, and after the vatrushki are baked, you can brush them with vegetable oil. But that would no longer be according to GOST. Serve warm or chilled. Perfect with tea.

Prepare all the ingredients you need to make GOST-compliant vatrushki.

In 60 millilitres of warm water, dissolve the yeast and 100 grams of flour. Mix everything until smooth, cover, and leave in a warm place for 2 hours at 40 degrees for the sponge to rise.

Pour the starter into a bowl—I use a tall pot—then add the remaining warm water. Add the melted margarine, sugar, and salt, and stir until everything is dissolved and smooth.

Sift the flour into the liquid part and knead a soft dough. Shape the dough into a ball.

Cover the dough and leave it in a warm place for 2.5 hours until it rises 2 to 3 times in volume.

Divide the risen dough into equal pieces weighing 58 or 29 grams. Roll them into balls, flatten them into rounds, and place them on a baking sheet greased with vegetable oil. Cover and let rise for 15–20 minutes. Using a glass, make an indentation in each round.

In a bowl, mix cottage cheese, egg, softened butter, and sugar.

Add the flour to the cottage cheese mixture and mix until smooth.

Spread the filling over the plushki and level it smooth. For 58 g pieces, use 30 g of filling; for 28 g flatbreads, use only 15 g.

Brush the vatrushki with egg and bake them straight away in a hot oven at 230°C for about 15 minutes. When they are done, take them out and let them rest for a short while under a towel.

Remove from the oven and serve warm or cooled.
