
Vatrushki with cottage cheese, feta, and herbs
Description
The pastry is prepared simply and quickly. Most often, people make vatroushki with sweet filling, but I offer a non‑sweet version – vatroushki with cottage cheese, feta and herbs. The pastry turns out very tender, tasty, fluffy and aromatic! The dough is simple to make, yet very successful. Be sure to try it! Such vatroushki will especially please cottage‑cheese lovers. Serve with tea, coffee, milk or as an alternative to bread with hot dishes. Very delicious. Serve warm or chilled. Perfect with tea.

Prepare all the ingredients.

Sift the flour into a deep bowl, add sugar, yeast, and 1/2 tsp salt.

Pour in warm milk and add two eggs.

Mix everything together and add the vegetable oil right here.

Knead the dough, shape it into a ball, cover it with plastic wrap, and place it in a warm spot.

Let the dough rise for 4 hours. During this time, fold it 2–3 times as it rises.

For the filling, pass the cottage cheese through a sieve.

Add grated brynza.

Any chopped fresh herbs, an egg, and a little salt.

Stir. The filling is ready.

Divide the dough into equal pieces, roll them into balls and let them rise for about 15 minutes. Then roll each ball into a circle and make cuts along the edge with a knife every 1 cm.

Form the edges of the pastry by folding the cut edge of the dough inward, as shown in the photo.

Transfer the dough pieces onto a baking sheet lined with parchment paper. Fill the pastries with the filling and brush with egg. Let them rest for 20 minutes to rise.

Bake at 180 °C for about 25 minutes. The cheese pastries with cottage cheese, brynza, and herbs are ready.
