Carrot Vatrushki

Description

The dough for these vatrushki is not quite traditional, but don’t let that scare you. Even if it seems to you that you didn’t knead the dough thoroughly, it will still be soft and airy. Vatrushki with carrots turn out fluffy, fragrant, and stay fresh for a long time. Serve warm or chilled. Perfect with tea.

    Prepare the required ingredients.

    In a glass of warm water (36–38 degrees), dissolve the sugar and yeast. Let it sit for 15 minutes.

    Pour 3.5 cups of flour into a bowl, add softened butter, eggs, and salt. Rub with your hands into coarse crumbs.

    Pour in 2 tbsp of vegetable oil and the yeast mixture. First, stir with a spoon. As soon as it becomes difficult to stir, knead by hand. If the dough sticks to your hands, add the remaining flour one spoonful at a time. Knead until smooth.

    Round the finished dough. Transfer it to a bowl, cover with a towel, and leave it for 1 hour to rise in a warm place.

    While the dough is rising, make the filling. Grate the carrot on a fine grater.

    Heat 3 tbsp vegetable oil and 2 tbsp butter in a frying pan. Add the carrots and sauté over slightly below medium heat until tender.

    Rinse the raisins and pour boiling water over them for 5 minutes.

    Peel the apples and remove the cores. Grate them on a coarse grater and add to the carrots. Add sugar to taste. Mix well.

    Drain the water from the raisins, squeeze them, and add them to the carrots with apples. Stir, heat for another 3–4 minutes, without allowing the contents to brown, and remove from heat. Cool.

    After this time, the dough will noticeably increase in size. Punch it down.

    Divide the dough into 9–12 portions. Shape them into balls. Line a baking sheet with parchment paper. Place the pieces on the baking sheet. Cover with a towel and leave for 15 minutes to rise.

    After a while, use a glass to make indentations in the prepared pieces.

    Spread out the filling. Leave for 10 minutes. Then brush with egg yolk. Place in an oven preheated to 200 degrees and bake for 20–25 minutes.
