Description

Goes perfectly with tea and coffee. Whatever anyone says, yeast and baking powder get along beautifully. The dough turns out light as a cloud and stays soft for a long time. The easiest way to make hollows in the dough balls is with a glass. Dip the bottom of the glass in flour, then press it into the center of each ball, turning slightly to widen the hollow and form a rim. Don’t overfill the wells—the filling may run out in the oven. For extra flavor you can add berries and nuts to the filling, and after baking and cooling, dust with confectioners’ sugar.

    Prepare all the ingredients you need to make vatrushki with mascarpone. Take the mascarpone out of the refrigerator ahead of time so it can come to room temperature.

    Crumble the yeast into warm water, add the sugar and salt. Mix everything thoroughly until dissolved.

    Crack the egg into the liquid, pour in the vegetable oil, and mix.

    Mix the flour with baking powder and sift into a bowl. Knead a soft, non-sticky dough. Knead the dough for 7–10 minutes. Shape the dough into a ball and place it in a bowl greased with vegetable oil.

    Cover the bowl and put it in a warm place for 50–60 minutes. The dough should rise to 2–2.5 times its original size.

    For the filling, mix the egg, melted white chocolate, vanilla sugar, and cottage cheese. Blend everything in a blender until smooth.

    Divide the risen dough into equal portions and roll into balls. Grease a baking sheet with vegetable oil and place the dough balls at intervals, cover, and let stand for 15 minutes. During this time the dough will increase in size. Make indentations in the balls and add the filling. Beat the egg until smooth and brush the dough with it.

    Place the baking sheet with the vatrushki in a hot oven and bake at 180 degrees for 20–25 minutes, until done. Remove the finished vatrushki from the oven, brush with vegetable oil, and cover. Let stand for 5–10 minutes, then serve.
