
Vatrushki with raspberries

Prepare the ingredients.

Pour flour, yeast, salt, and sugar (35 grams) into a bowl for mixing the dough, and stir.

Make a well in the flour, pour in the warm milk and the beaten egg, and add the softened butter.

Knead the dough; you can knead it by hand, working it for at least 7–10 minutes, or use a mixer, in which case the kneading time will be shorter, about 5 minutes. The dough should become soft, elastic, and not stick to your hands.

Roll the dough into a ball, cover it with plastic wrap, and leave it in a warm place for 40–45 minutes.

During fermentation, the dough increased in size by at least 1.5–2 times.

While the dough was rising, prepare the filling. To do this, mix the cottage cheese and sugar (35 grams), and add a packet of vanilla sugar. If the cottage cheese is not soft enough, it should first be rubbed through a sieve.

Divide the dough into 10 equal parts, and shape each part into a ball. Place them on a baking sheet and make an indentation (you can use a glass). Fill the indentation with cottage cheese filling.

Whisk the egg yolk with a tablespoon of sugar, then use a pastry brush to glaze the vatrushki.

Arrange raspberries on top of the cottage cheese filling.

Bake the vatrushki in the oven for 35–40 minutes at a temperature of 180–200 degrees. If desired, you can dust the vatrushki with powdered sugar before serving. I wholeheartedly recommend making them!
