
Vatrushki with cranberries
Description
The bake comes together easily and quickly. Making the dough for the vatrushki is not hard, even for a beginner home cook. The filling, though, deserves your attention. It is important that the cranberries soak in the sugar syrup until the berries turn almost transparent. Do strain the cranberries through a sieve. Add the berry syrup sparingly to the filling and again after baking. Do try making these unusual vatrushki. Serve cooled or slightly warm.

Prepare the necessary ingredients.

Warm the margarine slightly so it isn’t hot.

Pour 130 ml of warm water into a bowl. Add yeast and 25 grams of sugar. Stir. Leave for 10 minutes.

After the specified time, add the melted margarine, flour, and salt to the yeast mixture.

Start mixing the dough with a spoon. As soon as it comes together into clumps, knead by hand. If it is very sticky, add a couple of tablespoons of flour and knead until smooth.

The finished dough should be soft and only slightly sticky to the touch. Transfer it to a bowl. Cover with plastic wrap and leave in a warm, draft-free spot for 1.5 hours.

While the dough rises, make the cranberry filling. Put the cranberries in a saucepan, add 120 grams of sugar and water. Set over low heat. Cook for 25 minutes, stirring. When the time is up, the cranberries should absorb the sugar syrup and the syrup should reduce slightly. Remove from the heat.

Strain the filling through a sieve and leave it to cool as is.

When the time is up, the dough will have increased in volume. It is ready for shaping.

Knead the dough lightly. Divide into 100-gram portions. I ended up with 6 portions. Round each portion and place on a baking sheet lined with parchment paper. Cover with a towel and leave for 15 minutes.

After 15 minutes, use the bottom of a glass to make a depression in each piece. Gently stretch it outward with your fingers. Arrange the cranberries drained from the syrup on top and pour a teaspoon of syrup over each. Leave on the counter for 10 minutes. Then bake in an oven preheated to 180°C for 15–17 minutes. Adjust for your oven’s behaviour.

When the vatrushki are baked, remove them from the oven. Add one tablespoon of cranberry syrup to the filling. Cool the pastry thoroughly.

Once cooled, the vatrushkas may be dusted with powdered sugar, if desired, and served at the table.
