
Potato-filled vatrushki
Description
Homemade pastries for tea. Here is a simple recipe for potato-filled vatrushkas. Be prepared — the process is not quick, as the dough needs sufficient time to rise and rest before baking. Ready vatrushkas can be served either warm or cold — both ways taste equally delicious. The pastry is ready. Serve at the table.

Prepare the ingredients; the weight of the potatoes is indicated unpeeled. Leave the butter at room temperature to soften.

Peel the potatoes, cut large ones into big pieces, leave small potatoes whole. Cover with water, add salt to taste, and cook until tender.

Place the dry instant yeast and a pinch of sugar into a glass of warm water, stir with a wooden spoon, and leave in a warm place for 5–10 minutes. The yeast activates very quickly, so don't miss the moment, or it will overflow.

Add soft butter (30 g), salt, and sugar to warm milk (150 ml). Stir until the butter melts. Pour in the yeast, then mix again.

Add the sifted flour in parts. Knead a soft, pliable dough.

Place the dough ball into a deep container, cover with a clean dry towel, and leave it for an hour near a radiator or in a warm oven. Remember, dough is sensitive to drafts!

Drain all the liquid from the cooked potatoes, pour in hot milk (300 ml), add a piece of butter (100 g), and mash the potatoes with a potato masher.

Adjust the mashed potatoes for salt, then add raw eggs one at a time to the hot potatoes, immediately mixing quickly with a masher or spoon so that the egg whites don't have time to coagulate; otherwise, you'll get unattractive white streaks in the mash.

Divide the dough into 100-gram portions, making 6 pieces.

Roll out each patty to a thickness of 1 cm or so. Place the patties on parchment paper and let them rise for 30 minutes.
