
Classic vatrushki
Description
Delicious baked goods for the whole family. For making vatrushka dough, you can replace butter with margarine, but it's less healthy. It would be better if you reduce the amount of butter to 100 grams and add a little more vegetable oil (4-5 tablespoons).

To prepare classic vatrushkas, take milk. Warm it to a temperature of 40 degrees. Add sugar and salt to the milk. Dissolve them in the milk. Then add the yeast. Stir and let it sit for a while, allowing the yeast to "wake up". Next, add the beaten egg to the mixture. Stir again.

Sift the flour. Make a depression in the center and pour in the liquid mixture.

Knead the dough. Now add the melted butter and vegetable oil. Knead the dough again. Shape the dough into a ball. Cover the bowl with plastic wrap and let the dough rise.

The dough will double in size. It should be kneaded down. You'll get a ball like this.

Knead the resulting dough and divide it into small balls the size of a tangerine.

Press the bottom of a glass, previously dusted with flour, onto a dough ball to create a depression.

Prepare the cottage cheese filling for the vatrushkas. Mix the cottage cheese with egg white, sugar, and vanilla. Simply stir everything together with a fork. I'm using paste-like cottage cheese. If you're using homemade cottage cheese, first rub it through a fine sieve.

Transfer the prepared dough onto a baking sheet lined with parchment paper. Place a small amount of the cottage cheese mixture into each indentation. Soak the raisins in water (cover with water and heat in the microwave for 2 minutes). Place a few raisins on top of the cottage cheese mixture.

Brush the vatrushkas with beaten egg yolk. Preheat the oven to 180 degrees. Bake the vatrushkas in the oven for 20 minutes.

Serve the vatrushkas cooled. Delicious and aromatic vatrushkas will be ready for your tea time.
