
Vatrushka
Description
Homemade pastries for tea. You can make “Lakomka” vatrushki literally in no time. Vatrushki from this recipe are the lazy take on traditional baking. A quick dough and easy shaping make the process pleasant, and children will be happy to help you. The cottage cheese treats turn out tender and very tasty, and with no baking soda or baking powder in the recipe, the dough gets a slight layered effect. With tea, milk, or cocoa, they disappear to cheers. You can serve them with tea or coffee.

Prepare all the ingredients.

Combine softened butter and sugar.

Beat until smooth and fluffy.

Add the strained cottage cheese. You can blend the cottage cheese in a blender or press it through a sieve.

Mix and add the flour in portions. You may need slightly more or slightly less flour than indicated in the recipe.

The finished dough should be soft and slightly sticky; do not add too much flour. Shape it into a ball, wrap it in a plastic bag, and put it in the freezer for 10 minutes.

Dust your work surface with flour. For convenience, you can divide the dough into two parts. Roll each part into a sheet about 7 mm thick and, using two cookie cutters of different diameters, cut out the sochni. Regular cookie cutters or glasses of different diameters will work.

Brush the first layer of the product (large diameter) with egg.

Place the second (smaller) one on top of it, brush with egg in the same way, and sprinkle with sugar. If you like, you can make a hollow in the centre and fill it with jam, or insert a piece of dried apricot, a raisin, or a dried cherry.

Bake at 200 degrees for 15–20 minutes, until golden brown, and watch that they do not burn. The “Lakomka” vatrushki are ready. Remove from the baking sheet and cool.

Remove from the oven and serve warm or cooled.
