Description
The appetizer is quick and easy to prepare. Choose onions with a bright, rich husk color—it will best give the salo its beautiful color. You can also add chopped beet to the water to enhance the color. Do not use enameled pots; the husks will stain their walls.

Cut the salo into small pieces. Peel the onion.

Place a pot of water over medium heat. Wait until the water boils.

Add salt to the water, then pour the husks into the pot. Boil the water with the husks over low heat for about 15 minutes.

Place the salo in water and simmer it over low heat for 7 minutes. Remove the pot from the heat and let the salo cool in the water.

Finely chop the garlic and mix it with salo spices in a small dish.

Make several deep cuts in each piece of chilled salo with a knife, then sprinkle the salo with spices to taste, wrap in plastic wrap, and refrigerate for 24 hours. The salo is ready to eat.
