Description

This appetizer comes together quickly and easily. Colorful cured fatback with a hint of smoke is sure to please your loved ones. You can serve it at a festive table or buffet, or among close friends with a shot of vodka, black bread, mustard, beet horseradish, and the like.

    Prepare the listed ingredients. You may use any seasoning to your taste.

    Rinse the pieces of salo, scrape any dirt from the skin, and rinse again. Place the salo in a pot or kazan. Peel the onion and garlic cloves. Cut the onion into quarters and add them to the pot along with the garlic. Add salt and ground black pepper.

    Add the remaining seasonings and spices. Pour in water to cover the fatback, add liquid smoke, and place the container on the stove. Add bay leaves.

    Simmer the fatback for about 30 minutes over medium heat. Stir it from time to time so that it cooks through evenly and absorbs the aromas and flavors of the broth. Then turn off the heat and let the fatback cool in the broth for about 1 hour. It is best to place the container somewhere cool.

    Then remove the salo from the broth and either freeze it or cut it into portion-sized pieces and serve chilled.
