
Spinach Dumplings
Description

Sweet dumplings often fall apart, especially when you fill them with berries and try to pack in as much as possible to avoid eating too much dough. In this case, don't be greedy. Use a moderate amount of filling and seal the edges well. Serve hot.

First, we'll prepare the dough. Mix flour with water. Add 1 egg. Add sugar and salt. Knead thoroughly until you get a stiff dough. Cover it with a towel to prevent it from drying out.

Now let's move on to the filling. Rinse the spinach leaves under cool water. You can chop them in a blender or finely slice by hand.

Boil the eggs hard. Grate the cheese. You can use soft cheese or cottage cheese; in that case, add a little salt to it. Chop the eggs and mix them with the herbs and cheese.

Break off pieces of dough. Roll them into sausages. Cut the sausages into small pieces. Then roll each piece as thin as possible, but not too thin— they should not be translucent. Place the filling on top, then carefully seal the edges.

Heat water in a saucepan. Drop the vareniki into the boiling water. They should float to the surface and boil for about 5-7 minutes. Watch carefully so they don't overcook. Gently stir to make sure the vareniki aren't sticking to the bottom of the pot.
