
Cherry dumplings (pitted)
Description
At last, the season of fresh cherries has arrived! Now it's time to prepare the beloved dish in many families — vareniki. This dough-based dish is delicious with any berries, but vareniki with cherries are especially special. The dough is made with hot water. This is a proven recipe that ensures vareniki won't tear during cooking.

1. Heat the water to at least 50 degrees, add salt, and gradually incorporate the flour. Knead a firm dough that does not stick to your hands.

2. Remove the pits from the cherries. Today, kitchen gadget manufacturers offer special tools for pitting cherries. I did it the old-fashioned way — using a matchstick.

3. Roll out the dough thinly, place the filling in the center, and sprinkle with sugar. You can shape the dumpling by hand, or (once again) use a special homemade machine.

4. Place onto a board dusted with flour. The specified amount of ingredients yields approximately 25 dumplings on average.

5. We boil some of the dumplings, and freeze the rest on a board. Once the dumplings are well frozen, transfer them into a bag and store in the freezer.

6. Before serving, add butter and sugar to taste.
