
Salty dumplings with cottage cheese
Description
The recipe won't take much time. It's very important to achieve the right dough consistency. If you see that it's too sticky, add some flour. Find the right thickness for rolling by gradually adjusting the amount of water or flour. Serve hot.

We make the simplest possible dough. Mix flour with water, add a pinch of salt, and knead thoroughly by hand. To make the dough more elastic, you can add a tablespoon of vegetable oil.

Now roll out the dough to a thickness of about 5 mm. Constantly dust the rolling pin with flour so the dough doesn't stick and rolls out into a smooth layer. Using a round glass, cut out circles of a convenient size for you.

It's time for the filling. Mix the egg with the cottage cheese, thoroughly mash with a fork. Finely chop the bunches of greens into this mixture and add ground black pepper to taste.

Place a heaping teaspoon of filling onto each round of dough. Carefully shape the dumplings, sealing the edges tightly so the filling doesn't leak out during cooking. This amount of ingredients yields about 50 dumplings.

Freeze part of the vareniki for later use, and boil the rest in salted water (5-6 minutes). Serve them with sour cream or any sauces.
