Mix a pinch of salt with sifted flour. Gradually add cold or slightly warm water, rubbing the flour with a fork. Break an egg into the flour and knead until you get an elastic dough. Roll into a ball and let rest for 15 minutes. Then divide the dough into small pieces. Sprinkle the table with flour and roll out each piece into a thin, small-diameter flatbread using a rolling pin.

Prepare the filling. Place the cottage cheese into a bowl. Wash the herbs. I used a standard mix of parsley, dill, and green onion. Finely chop the herbs on a cutting board and add them to the cottage cheese. Break in an egg, then season with salt and pepper to taste. Mix everything thoroughly.

Place the ready cottage cheese filling onto the dough rounds. Pinch the edges tightly to seal completely, ensuring there are no gaps, otherwise the dumplings may fall apart during cooking. Put water on the stove and bring to a boil. Drop the dumplings into the boiling water and wait for them to float to the surface. You can gently stir them to prevent sticking to the bottom of the pot.

After the dumplings rise to the surface, reduce the heat and cook for another 5-7 minutes. Remove the dumplings with a slotted spoon and place them into a deep bowl. Add a piece of butter. Once the butter melts and the dumplings are soaked with it, transfer a portion onto a plate, add a spoonful of sour cream, sprinkle with fresh herbs, and enjoy your meal!
