
Dumplings with cottage cheese and cherries
Description
This recipe for cherry and cottage cheese vareniki is one of my favorites. The only thing that might bother you is their not-so-neat appearance. Unfortunately, there's nothing you can do about it—cherries release juice, so red streaks on the cooked vareniki are inevitable, no matter how you cook them—whether in a steamer, a pot, or a double boiler. That's why I usually use more cottage cheese and don't add cherries to every single dumpling. Then I place the less attractive ones at the bottom of the plate and the purely cheese-filled ones on top. Looks beautiful and tastes delicious! I highly recommend it.

1. First, beat the sour cream with one egg and a pinch of salt until smooth. Then mix in the flour. The dough should not be stiff. Let it rest in the refrigerator.

2. Mix the second egg with sugar and cottage cheese. You can also add vanilla and cinnamon. Blend until smooth. Thaw the cherries and remove the pits if necessary.

3. Take out the dough and roll it out into a flat sheet. Cut into equal circles using a glass. Place a small amount of cottage cheese and one or two cherry berries in the center of each circle. Seal the edges and boil in boiling water.
