
Dumplings with cottage cheese and spinach
Description
The recipe won't take much time. Probably, everyone can make vareniki. But for cooking beginners, I'm providing a detailed step-by-step recipe description. There's nothing complicated about it. The dough for these vareniki is my favorite—made with sour cream. It turns out very tender and at the same time elastic, and doesn't stick to hands or the table. Serve hot.

Prepare the ingredients for making dumplings with cottage cheese and spinach.

Prepare the dough. Put flour and salt into a bowl.

Mix the sour cream with warm water and pour it into the flour.

Mix the flour with salt and water with sour cream.

Knead a firm but elastic dough. Cover with a towel and let it rest for 10–15 minutes.

While the dough is resting, prepare the filling. Chop the spinach. If you have fresh spinach, rinse it with water first. If it's frozen, thaw it before chopping. Mix the cottage cheese with the spinach.

Roll out the dough into a sheet and use any cutter—cup or glass—to make circles.

Fill each dough circle with the spinach and cottage cheese filling.

Shape the vareniki and place them on a plate dusted with flour.

Now you can either freeze the dumplings for later or cook them immediately. Place the dumplings into a pot of boiling salted water and stir gently to prevent them from sticking to the bottom. Once they float to the surface, continue cooking for another 5-6 minutes, then remove them.
