
Dumplings with raw potatoes

For some reason, almost everyone adds boiled potatoes to this dish, while this interesting recipe for dumplings with raw potatoes is not very widespread. This is probably a matter of personal taste, but I personally find that if you don't pre-cook the potatoes and instead use them raw, the potato flavor in the dumplings is much more pronounced. So, peel the potatoes and onion, then chop the vegetables into small cubes. Salt the filling, season with spices, and add a little vegetable oil.

In sifted flour, make a small indentation and pour in milk, water, and vegetable oil. Break in an egg and add salt. Knead the dough thoroughly until smooth and uniform. If the dough is not firm and elastic enough, add a little more flour. Let the dough rest for 10–15 minutes, covered with a towel. Then divide it into several portions, roll each portion into a sausage-like strip, cut into small pieces, and shape them into balls.

In turn, roll the balls into circles, place the prepared filling in the center of each circle. Firmly pinch the edges together and shape neat dumplings.

Boil potato-filled vareniki in slightly salted water for 12–15 minutes and serve with sour cream or cracklings. Enjoy your meal!
