
Meat dumplings on boiled dough
Description
The dish is prepared without unnecessary complications. Vareniki can delight your loved ones during an everyday lunch or impress guests at a festive occasion. There are many recipes for this dish—different combinations of dough and filling create entirely new flavors, so we recommend trying as many variations as possible. Here, we use boiled dough and a filling made from pork shoulder, making these, perhaps, one of the most filling types of vareniki. Serve them with sautéed onions and sour cream for the best taste. The finished dish is now ready to be served.

1. Mix the water with salt and bring to a boil. Combine the sifted flour with vegetable oil, then gradually add boiling water one ladle at a time, stirring the dough thoroughly with a spatula after each addition.

2. Transfer the resulting dough onto the table, knead it, then continue kneading for 5-7 minutes. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 30-60 minutes.

3. Remove the dough from the refrigerator, knead slightly on the table, and roll out into a sheet 5-7 mm thick. Cut out circles 8-10 cm in diameter from the dough.

4. Prepare the filling: place pork shoulder in a saucepan, add salt, bay leaf, and mixed peppers. Simmer over low heat until cooked, then slightly cool the meat and pass it through a meat grinder (do not discard the broth from the saucepan).

5. Cut the onion into small cubes and fry in vegetable oil until golden brown. Set aside one tablespoon of the fried onion. Mix the fried onion with the minced meat, and add pepper and salt to taste.

6. Place the filling onto the prepared dough circles, shape into dumplings by pinching the edges together to form a half-moon. Gently bend the dumplings and place them on a floured board.

7. Slightly salt the water in which the meat was boiled. Cook the dumplings over medium heat: bring the water to a boil, then reduce the heat and cook for 8-10 minutes.

8. Use a slotted spoon to transfer the dumplings into a bowl and mix them with the reserved sautéed onions. Serve the hot dumplings with sour cream and chopped herbs.
