Dumplings with raspberry filling

Description

The recipe won't take much time. Since childhood, this treat has been my favorite; my grandmother often made juicy raspberry dumplings at home. Her recipe was extremely simple, and I still use it today, believing it to be the best—dumplings turn out excellent with it. You can also try making these dumplings with frozen raspberries available in stores; it should work out well. Serve hot.

    First, we need to carefully sort the raspberries, rinse them, and then sprinkle the berries with sugar. Let the raspberries sit for about half an hour so they release their juice. After that time, drain off the excess liquid—we will only need the berries.

    For the dough, mix kefir with baking soda and salt in a bowl, then gradually add flour to the kefir, kneading the dough. The amount of flour indicated here is approximate; keep adding it until you get a soft, smooth, elastic dough that does not stick to your hands. Cover the dough with a towel and let it rest for 20–30 minutes. When both the dough and raspberries are ready, divide the dough into several portions and roll each portion out into a flat sheet, then cut out circles from the dough.

    Place a small amount of filling on each circle.

    Seal the edges of the dough and shape it into a dumpling, repeat the same with the remaining dough.

    You can freeze some of the vareniki for later use, and cook the rest immediately by boiling them in water.
