
Dumplings with sauerkraut
Description
It's easy to prepare vareniki with sauerkraut at home, especially since the whole family can join in. As a sauce, in addition to sour cream and onion, you can fry up some bacon bits and sprinkle everything with dill on top. Finger-lickin' good!

1. First, prepare the filling. Cut the onion into cubes.

2. Sauté the chopped onion in vegetable oil over medium heat. When it turns golden, transfer it to a separate plate. Add more oil and lightly sauté the sour cabbage. If the cabbage is coarse, chop it with a knife before frying.

3. Add about one-third of the onion to the cabbage, mix, and season with pepper.

4. Let's work on the dough. Mix salt, room-temperature kefir, and 0.5 teaspoon of baking soda. Gradually add flour, stirring constantly.

5. When the dough thickens enough, place it on the table. The dough should not stick to your hands, and this is "adjusted" with flour. Cut off a piece of dough a couple of centimeters wide and cut it into cubes.

6. Roll the cube in flour, roll it out with a rolling pin, place a spoonful of filling inside, and carefully seal the edges.

7. Boil the ready dumplings in salted boiling water for about 7 minutes after the water comes to a boil.
