
Dumplings with cabbage and potatoes

I'll help you with that and show you how to make dumplings with cabbage and potatoes. This excellent dish is often attributed to Ukrainian traditional cuisine, but in fact, it's widely popular across all CIS countries, making it familiar and homey to all of us, with a taste that brings real warmth and comfort of home. Although making cabbage and potato vareniki at home is not the easiest task, it's definitely worth the effort. Handmade vareniki are incomparable to the mushy store-bought ones, so gather your patience and let's get started.

Sift most of the flour through a sieve into a deep bowl, add water, milk, salt to taste, and the egg, then mix thoroughly.

Pour the remaining flour onto the table, place the dough on it, and continue kneading by hand. Cover the finished dough with a clean towel and let it rest for half an hour.

While the dough is rising, we peel and finely dice the onion.

Pour vegetable oil into a frying pan and sauté the onion in it until golden brown.

Transfer the onion to a plate, and place the chopped cabbage in the pan; fry it as well until golden brown.

Peel the potatoes and boil until fully cooked, mash into a puree, add fried onions, ground pepper, and salt, then mix the filling.

Now both fillings for our dumplings are ready, we can move on.

Divide the dough into two equal parts, place the first part on a floured surface and roll it out into a thin layer. Cut small circles out of the dough using a glass.

Place the cabbage filling in the center of each circle, bring the edges of the dough together, and twist them into a rope-like seal.

Roll out the second part of the dough, cut out circles, and place the potato filling in the center.

Potato vareniki can be shaped in a different way so that later you can tell which filling is in each varenik.

Now we just need to boil what we've shaped, which will take about 10 minutes.

And serve the dumplings at the table, either with sour cream or with cracklings.
