Description

The recipe won't take much time. Cabbage-filled vareniki are a classic of Russian folk cuisine, traditionally eaten during fasting periods in Russia. If you're observing a fast today, cabbage vareniki deserve a place on your table; if not, they're still worth making just for the pleasure. The vareniki turn out tender and soft. You can also use sauerkraut instead—then they will have a pleasantly tangy flavor. Traditionally, cabbage vareniki are served with sour cream and fresh herbs. Serve them hot.

    Add salt to the flour, mix, then pour in a glass of warm water.

    Knead the dough thoroughly until it stops sticking to your hands. Cover the dough with plastic wrap or a towel and place it in a warm spot for 40–50 minutes.

    Grate the onion and carrot on a fine grater.

    Sauté them briefly in olive oil.
