
Dumplings with peas and onions

Prepare all the ingredients.

In a deep bowl, mix the flour and a pinch of salt. Add water.

Knead the dough until smooth. Knead well for about 5 minutes, then roll into a ball and wrap in plastic wrap. Let it rest at room temperature for 1 hour.

For the filling, boil split peas with a pinch of baking soda until soft. To speed up cooking, it's better to soak the peas in water beforehand for 4 hours.

Cut the onion into small cubes. Fry in a pan with vegetable oil until golden brown.

Drain the boiled chickpeas in a colander to remove excess liquid. Mash them with a fork or potato masher until smooth. Add 2/3 of the fried onions, salt and black pepper to taste. Mix well.

Roll out the dough to a thickness of 2-3 mm. Cut out circles. Place 1-1.5 tsp of filling into each circle. Fold in half and pinch the edges.

Boil the dumplings in salted boiling water for 10 minutes, until they float to the surface.
