
Lentil dumplings
Description
Lentil vareniki – a dish that combines our national cuisine with an Eastern innovation. Lentils have long ceased to be an exotic ingredient in our kitchens, and I really like this product. I decided to try this interesting recipe. Instead of the usual potato, cottage cheese, or mushrooms, I prepared a filling made from green lentils and canned green tomatoes. The tomatoes add a slight tanginess and nicely balance the starchy flavor of the lentils. Instead of tomatoes, you can use a pickled cucumber – it's just as delicious. So, here's the recipe for you:

Mix the flour with water, a pinch of salt, and a spoonful of oil. Knead a firm but soft dough. Let it rest for 20–25 minutes.

For the filling, soak the lentils in water for several hours. Then cook until soft. Add finely chopped tomatoes and herbs.

Finely chop the onion and fry it in vegetable oil. Add it to the lentils and mix. The filling is ready.

Roll out the dough into a 1 cm thick layer. Use a glass to cut out circles. Place a small amount of filling on each circle.

Pinch the edges of each dumpling. Place them on a surface dusted with flour.

Boil the vareniki in salted water for 5-7 minutes after they float to the surface. Then, I like to pan-fry them slightly to get a golden crust.
