Description

Yes, of course, vareniki are made in many Slavic countries, but only Ukrainian-style vareniki made at home turn out so delicious—there's something special about them. The variety of fillings for this dish is enormous; it's hard to list them all: cabbage, mushrooms, berries, vegetables, fruits, and even poppy seeds. In my recipe for Ukrainian-style vareniki, I've used the classic and, in my opinion, the most delicious filling—potato.

    Let's start by preparing the dough. Sift the flour into a bowl, add salt, and butter cut into small pieces. Bring the water to a boil, then gradually pour it into the bowl with the flour and other ingredients.

    Knead the dough, adding more flour if necessary until it stops sticking to your hands. Then place it on the table and knead thoroughly by hand for 20 minutes. After that, wrap the dough in plastic wrap and refrigerate for half an hour. During this time, you can prepare the filling: I boiled potatoes, mashed them into a puree, mixed with sautéed onions, and added salt and ground pepper.

    After half an hour, take the dough out of the refrigerator and place it on a floured flat surface. Divide the dough into 2-3 parts and roll each part out one at a time into thin sheets. Cut out circles from the dough. Place about one tablespoon of filling onto each circle, then bring the edges of the dough together to seal.

    Form the dumplings until the dough runs out.

    Then cook them in salted water for 4-5 minutes after the dumplings float to the surface. Serve with fried pork fat and onions or sour cream. Enjoy your meal!
