
Poltava-style vareniki
Description
The dish is prepared without unnecessary complications. Varenyky are loved and made throughout Ukraine, but in Poltava, this dish has become a signature specialty, and today I will show you how to make Poltava-style varenyky. Their main feature is an exceptionally tender and soft dough that holds its shape during cooking yet melts in your mouth. Making Poltava-style varenyky at home is incredibly easy, and although the filling for this dish can vary, I suggest trying the classic version—with cherries. The finished dish is ready to be served.

Step 1

First, we mix the kefir with sugar and add the egg, then beat everything a little.

Sift the flour and mix it with salt and baking soda.

Now combine the flour mixture with the kefir-egg mixture.

Knead a smooth and elastic dough; the longer you knead it, the more tender it will be in the finished dish. Cover the dough with a towel and let it rest for 30–40 minutes.

After the time has elapsed, we divide the dough into several portions and roll them out one at a time on a floured surface. From the resulting dough sheet, we cut out circles using a cup or glass, place a little sugar (to taste), a pinch of starch, and a couple of cherry berries onto each circle.

Press the edges of the dough tightly together.

Traditionally, Poltava-style dumplings are steamed, but you can also boil them, as I did. Drop the dumplings into boiling water, stir (otherwise they will stick to the bottom), and cook for 5-6 minutes.
