
Dumplings with kefir without eggs

Once cooked, the dumplings are voluminous, thick-walled yet tender and light. The kefir-based dough is much more delicate in taste, and the dumplings cook incredibly quickly, so they don't have time to become overcooked. Keep this recipe in mind. Prepare all the ingredients.

Mix kefir (at room temperature), baking soda, and salt.

Add the flour in parts.

First, mix the dough with a spoon, then transfer it to the table and continue kneading by hand.

The dough should not stick to your hands, yet remain elastic and soft. Shape it into a ball, transfer to a bowl, cover with a towel, and let it rest for 20–30 minutes.

As a filling, I have mashed potatoes today. You can optionally add sautéed onions or cracklings to the potatoes. Or you can use any other filling you like: cottage cheese, cabbage, mushrooms, etc.
