
Varenets
Description
The recipe won't take much time. For making varienets, you'll need boiled milk. Adding a starter culture to varienets is not necessary. However, when prepared this way, the milk will sour much later than if a starter were used. Preparation: Pour the milk into three glass bottles and place them into a large, but not too deep, clay bowl. Heat up the oven and put the bowl with the milk-filled bottles inside. During heating (the oven temperature should not be too high), foam will form on the milk's surface. Take a spoon and push this foam down to the bottom. Repeat this procedure four times. Now, pour out one glass of milk, let it cool, then add sour cream and mix well. Then combine this mixture back into the rest of the milk. Pour the milk into glasses, evenly distributing the foam, and place in a warm spot. If you want the milk to sour faster, you can add a piece of black bread crust. Put it into the refrigerator once the milk has soured. Serve the ready varienets chilled, with honey or sugar mixed with cinnamon.
