
Green peach jam
Description
Winter preserves at home. If you have by chance bought underripe green peaches, don’t worry—you can turn them into jam that is every bit as good as any other. Serve it with a meal or keep it in the pantry.

Wash the peaches thoroughly under cold water and remove the skin (if it peels poorly, dip in boiling water). Cut into wedges and remove the pits. Cover the peaches with sugar and leave for 6–8 hours so they release their juice.

After the waiting time has passed, place the container with the peaches on the heat, bring to a boil, and let cool. After 10 hours, finish cooking the jam until it is done, simmering for 25–30 minutes. Pour the finished jam into sterilized jars, seal with lids, and turn the jars upside down until completely cool.

The preserve is ready. Store in a cool place.
