
Jam from Green Walnuts
Description
A simple preservation recipe. You can make green walnut jam at home as early as early July, when it's time to harvest the fruit. Despite the painstaking work involved in making this jam, it's worth it. Even the most finicky sweet tooths will appreciate this unusual jam. Store in a cool, dark place.

1. Harvesting green walnuts begins at the end of June to early July. These walnuts are soft, so they cut well with a knife. Wash the walnuts thoroughly.

2. Place the nuts in a basin and cover with cold water. Change the water up to 4 times during the day, and after two days you can proceed to making the jam.

3. Now you need to prepare the lime that will be used to soak the nuts. Pour 5 L of cold water over 0.5 kg of slaked lime. After that, mix thoroughly and let it stand for a while. Cover the nuts with the clear upper solution and leave for 24 hours.

4. Nuts can be boiled whole or split in half. Wash the nuts thoroughly several times, then cut them in half (or pierce them).

5. Heat water in a saucepan and blanch the nuts for 20–25 minutes. The nuts will change color noticeably. Repeat the procedure once more.

6. Now prepare a syrup from water and sugar. At the end, add the cloves and put the nuts into the syrup. Bring the preserve to a boil, simmer on low heat for 5 minutes, then let them stand for 1 hour.

7. Repeat such five-minute boils up to 5 times. Meanwhile, prepare the jars, then pour in the jam and seal the lids.

8. This is the beautiful green walnut jam you get when making it at home. Store it the same way as any other jam.
