Green Cranberry and Quince Jam

Description

Perfect for stocking up for winter. As you can see, this green cranberry jam recipe is quite unusual. I usually use it when the cranberries aren’t all fully ripe and include some green berries. When harvesting, you often get quite a lot of them—and you shouldn’t just throw them away! Once you know how to make jam from green cranberries, you’ll have a way out of this situation. It turns out tasty and unusual—give it a try. Jars keep for up to a year in a cool place.

    1. Add the sugar and water to a saucepan right away and bring to a boil until the sugar dissolves. Add the quince, cut into thin slices or matchsticks.

    2. Simmer for 20 minutes over low heat. When the quince is soft, add the red cranberries and ginger.

    3. Reduce until thick and test for set. Now add green cranberries to taste—they are very tart, so do not overdo it!
