Frozen Cherry Jam

Description

Winter preserving at home. All winter I make jam from frozen berries and fruit. Small batches of fresh jam are eaten quickly and don’t take up extra space. This jam uses less sugar, since I’m not planning to store it long-term. Besides, if you don’t have your own garden, the price difference between in-season berries and frozen ones is barely noticeable. And I make winter jam in the microwave — very quick and convenient. Give it a try. Store in a cool, dark place.

    Prepare the ingredients.

    Place the berries in a deep glass bowl suitable for the microwave. Without thawing, sprinkle with sugar and let stand for 3–4 hours.

    Boil the berries on maximum power for 5–7 minutes. Remove, skim off the foam, and stir. Let stand for 1 hour.

    Reheat the cherries for another 5–7 minutes. Remove from the microwave and add lemon juice—about one or two tablespoons, to taste. Frozen cherries are usually not very tart, and lemon juice works perfectly here. Return the bowl to the microwave and cook until the desired thickness, another 5–7 minutes.

    The jam is ready. Let it cool and serve with tea. If you plan to eat the jam within a few days, you can leave it on the table.
