
Apple Slice Jam with Baking Soda

Homemade preserves keep for a long time. Here is a simple recipe for apple-slice jam with baking soda. To make this wonderful jam, I used Antonovka apples. They are rarely used for jam; more often people make jelly or apple butter from them. In jam, these apples can cook down too much, yet few varieties can match the unmistakable aroma of Antonovka apples. Good luck with your cooking. The preserve is ready to store for winter.

Wash the apples, cut them into slices, and remove the core and seeds. Place the slices in a bowl of salted water (1 teaspoon per liter of water). The salt will help keep the apples from browning as much.

Prepare a baking soda solution (2 teaspoons of baking soda per liter of water). Rinse the apples and place them in the soda solution for 5 minutes. The soda will keep the apples from turning mushy. Then rinse the apples again and put them in a cooking pot, sprinkling sugar on top.

Put the apples that have released their juice over heat and bring to a boil.

The apples should be boiled in three stages, with 6-hour breaks between each. As they cook, they will swell and turn translucent. Doneness is easy to check: simply drop a bit onto a plate—if the drop does not spread, the jam is ready!
