
Apple Jam with Whole Slices

A simple way to make a batch ahead. This is a classic recipe for apple jam made with whole slices. Choose only firm, juicy, and sweet apples. Slice the apples thinly, because you do not boil the jam—you bring it to a boil and let it steep, repeating this sequence three times. Stir the jam very gently; the slices must not be damaged. Wash the apples and slice into thin wedges.

Transfer the apples to a cooking pot, sprinkle with sugar, add water, and stir. Cook over medium heat until boiling, then remove from the heat and set aside for 12 hours. Repeat the procedure 2 more times. Before the final cooking, add citric acid.
