
Apple Jam
Description
Ideal for winter storage. You can make jam from any variety of apples, but sweeter varieties work best—you can then use a little less sugar. Adjust to your own taste. Be sure to taste the jam while cooking. Jars keep for up to a year in a cool place.

To make apple jam, prepare the necessary ingredients.

Wash the apples thoroughly to remove any dirt. Core the apples and slice them. Place them in a saucepan right away, layering with sugar as you go.

Sprinkle sugar over all the apples. Cover with a lid and leave overnight so the apples release their juice.

Mix the apples with the juice and place over heat. Stirring, bring to a boil. Simmer for 1–2 minutes and remove from heat. Let cool. Repeat this boiling process 3–4 times.

During the final heating, add vanillin and cinnamon to taste.

For the jam, wash the jars and sterilize them using any convenient method. Pack the hot jam into the jars.

Seal the jam with sterile lids. Wrap in a warm blanket and let cool. Once the jars have cooled, store them in a cellar or basement.
