
Five-Minute Cherry Jam

Of course, this kind of jam needs special storage—I keep it only in the refrigerator, although friends assure me that in the cellar it keeps perfectly well until February, or even March. I don’t know, I haven’t tried it; I store it in the refrigerator, and I eat it much sooner than February–March arrives :) So, let’s make five-minute cherry jam. Jars keep for up to a year in a cool place.

Step 1

Sort through the cherries and discard any rotten or spoiled berries, as well as any foreign matter and debris. Rinse thoroughly under plenty of running water.

Sprinkle with sugar, mix, and leave for several hours until it releases juice.

Place over heat. As soon as it comes to a boil, cook for 5 minutes, skimming off the foam constantly.

Sterilize the jars.

Fill the jars with jam and seal with lids.
