
Pumpkin Jam with Ginger and Lemon
Description
Winter preservation at home. Cut the pumpkin into cubes and cover with sugar. Leave for several hours. When enough liquid has formed, pour in lemon juice and add sliced ginger root. Cook for the required time, then seal the jam. Good luck.

Let's prepare the ingredients and a heavy-bottomed pot for making jam.

Peel the pumpkin, remove the fibers and seeds.

Cut the pumpkin into cubes.

Sprinkle with sugar according to the proportions, and leave for 3 hours to release the juice.

Squeeze the juice from the lemon and strain it (there should be no seeds). Peel the ginger and cut it into thin strips.

After 3 hours, there should be quite a lot of juice. I poured in the lemon juice and added the ginger. I brought the mixture to a boil, then simmered it for 1 hour. After 15 minutes of simmering, I removed the ginger: that was enough time for it to release its aroma and flavor.

Pack into sterile jars, cover with sterile lids — and seal. Turn the jars upside down until completely cooled.
