It turns out very bright and juicy, and the taste of the pumpkin itself is barely noticeable; oranges or lemons are often added as well, but personally I prefer sea buckthorn. This berry pairs wonderfully with pumpkin, and in the end the jam develops a rather interesting, exotic flavor, somewhat reminiscent of pineapple. Everyone in our family enjoys this treat; even the children, who cannot stand pumpkin, never refuse this jam. Pour a glass of water into a basin or large pot and place it over the heat. As soon as the water boils, start adding sugar one glass at a time, stirring constantly. When one glass of sugar has dissolved, add the second, then the third, and so on; in the end you should have a thick sugar syrup.

Add the sea buckthorn to the prepared syrup, mash it lightly, and bring the mixture to a boil, but do not let it boil.

Now add the peeled, cubed pumpkin, mix everything together, and simmer the jam over low heat until the pumpkin is almost transparent.

Then pour the jam into clean jars and seal them with lids. Pumpkin jam is best stored in the refrigerator or another cool place.
