Description

A preservation recipe without unnecessary fuss. If you want your preserves to be not only tasty but also good for you, this simple no-cook blackcurrant jam recipe is exactly what you need. I'm sure you've heard more than once that this berry contains many vitamins and beneficial compounds that help strengthen the immune system and ward off colds. And since we won't heat-treat our jam, we'll keep the berries' benefits intact — we'll just need to store our fragrant treat in the refrigerator. I think you can spare a little room in there for that; with this easy no-cook blackcurrant jam you'll make a fine family remedy for the cold autumn and winter months. Jars keep for up to a year in a cool place.

Instructions

  1. 1

    Step 1

    Step 1

First, remove the berries from the stems, discard all debris and spoiled berries, wash the good ones under cold water, and drain them in a colander so the liquid drips off.

Next, puree the currants until smooth using a blender or food processor.

  3. 3

    Step 3

Transfer this mixture into a saucepan, add the sugar, stir, and let it stand for half an hour so the sugar dissolves. When the time is up, stir everything thoroughly once more.

When you are sure the sugar granules have fully dissolved, you can pour the jam into sterilized jars and seal them with nylon lids (not metal). Store this treat in the refrigerator or another cool place; the jam will keep there all winter.
