Prepare all the ingredients.

Wash the plums, cut them in half, and remove the pits.

Sprinkle the plums with sugar and leave for 2–4 hours so they release their juice. The time will depend on how juicy the plums are.

Transfer the plums to a heavy-bottomed saucepan. Add a cinnamon stick and star anise. Bring to a boil over low heat and cook the jam for 10 minutes. Foam will form during cooking; skim it off.

Remove the pot from the heat and let it cool completely. Then bring back to a boil and simmer for another 10 minutes.

Remove the cinnamon and star anise, and transfer the hot jam into a clean sterilized jar. Seal the jar, turn it upside down, and wrap it in a kitchen towel. Leave it like this until completely cooled.
